Stuffed peppers- Yummy! Stuffed peppers can be a satisfying lunch, a great for dinner served with a mixed green salad or could be done as an appetizer. Anyway you serve them they are delicious!
- 4 Peppers
- 1 cup of quinoa
- 1 cup of black bean
- 1 onion
- 3 garlic cloves
- 1 Portobello mushroom
- One can of tomato paste
- ½ table spoon of salt
- ½ table spoon of crush peppercorns
- 1 teaspoon of cayenne pepper
- 1 teaspoon of cilantro leaves
1). Add one cup of quinoa to two cups of boiling water and cook on low for 15 minutes and then take of heat. Keep lid on for 10 minutes, than fluff with a fork.
2). Fry onions, garlic and mushroom on medium till soft and browned. Then add beans, quinoa, tomato paste and spices and keep on heat for 5 minutes.
3). Cut peppers in half and brush the outside with olive oil. Stuff peppers with the black bean and quinoa filing.
4). Cook for 15 minutes on 425 and you’re done!
