Hot and healthy soup. Easy, vegan and toddler approved.


1-2 Tbsp of olive oil

1/2 cup chopped onion

2 cloves of chopped Gralic

1 cup chopped carrots

1/2 chopped zucchini

1/2 cup chopped celery

1 cup cooked brown rice rigatoni noodles

1 can of organic crush tomatoes

2 cups of Organic or home-made vegetable broth

1 cup tomato past sauce (give a sweetness and flavour kids like).


  1. In the bottom of a large pot warm up the olive oil and then add the onion and garlic.
  2. Once the onions are soft, add all the other veggies and saute on medium heat.
  3. Once the veggies are slightly tender add the vegetable stock and then add in the can of crushed tomatoes and pasta sauce, cover and let the vegetables soften  some more. You can let this sit on medium for 15min, stirring in and heating up all the ingredients. Then bring down the heat to low, so your veggies don’t turn to mush!
  4. Right before you are ready to serve put in the pasta noodle.

That is it! I made this up on a saturday afternoon and my kids loved it! Soups are a great way to get ride of all those odds and ends left in your fridge at the end of the week. Get creative! xoxo Anna.
