Garden vegetable Quinoa and wild rice Salad

The holidays are all about getting together with friends and family and enjoying food and drink. And it can be hard to slip healthy dishes into the mix without being too much of a buzz kill. Well fear no more because this is a hungry man or woman salad that will not be dismissed as a boring or light salad. Its filling, includes a good dose of protein and tastes amaze! Prefect to bring to a pot luck or family gathering.

Ingredients- Salad

2 cups of Quinoa and wild rice

1 green pepper

1 Head of Broccoli

1 Carrot

Ingredients- Dressing

½ Cup Olive Oil

¼ Cup Apple Cider Vinegar

2 tablespoon of Dijon mustard

2 tablespoons of agave

1 clove of garlic

½ tablespoon of black pepper

Directions

1). Add 2 cups of wild rice and quinoa to 3 cups of boiling water. Reduce heat to low and let simmer for 25 minutes with lid on tight.

2). Cut broccoli into small pieces and steam for 5-7 minutes. Or until lightly cooked but not yet soft.

3). Combine cooked quinoa and wild rice, broccoli and diced carrots and green pepper into a large bowl.

4). In a small bowl combine minced garlic, olive oil, apple cider vinegar, agave, pepper and mustard. Whisk until blended.

5). Pour dressing into the large bowl and toss salad contents until evenly distributed.
