Vegan Whipped Cream

Christmas day is all about indulgence- chocolate for breakfast, beer for lunch and the fun just goes on and on into the night.

One of my favorite things to have on Christmas morning is a sweet and creamy latte. I heard that coconut milk could be a substitute for whipped cream, so  I decided to try it and it works!

I will defiantly be having this again on Christmas morning and Boxing Day.

Ingredients

1 can of coconut milk

2 tablespoons of vanilla extract

Directions

1). Purchase a can of coconut milk! Obvious I know but this step is important because you must be careful some of the coconut milk out there is filled with preservatives. I buy AROY-D, because it is the only brand I can find in which the ingredients only include pure coconut extracts and water. The other brands had a lot of sugar and a number of other things in which I couldn’t pronounce. I generally have a rule that states “if I can’t say it, I don’t eat it.”

2). Place the can of coconut milk in the fridge for at least 24 hours.

3). After the 24 hour period open the can and you should find that the coconut milk has a thickened and is much like a whipped cream like texture.

4). Add two teaspoons of vanilla extract and whisk for a couple of minutes to thicken.

Add the coconut whipped cream to your coffee and create a thick and creamy latte! You can also add to fresh fruit as a tasty dessert or breakfast treat.
