In the spirit of summer I threw together a quick vegan potato salad last night. It was hit for David and I! The kids weren’t as enthusiastic because of all of the mystery greens, toddlers can be such food snobs 😉 Anyway this salad was very fast to make and I added a few extras to pump it up. I Stirred in a few tablespoons of Nutritional yeast, which is a great source of B-12, adds non-animal protein and is also high in fibre. I also added Hempseed oil which is high is Omega 3. Omega 6 is typically much easier to find then omega 3, as omega 6 is in a lot of processed foods. Many people are lacking in omega-3, hemp seed oil has a great balance of omega 6 and 3. You can sneak hemp seed oil in salad dressing and even in smoothies. Enjoy the salad! I wrapped mine in big crispy lettuce leafs! xoxo Anna.
Mix all the following ingredients in a big beautiful bowl!
4 cups of mini-potatoes (boiled and the skin left on)
1 cup of finely chopped spinach
1/2 cup chopped celery
1/3 cup of chopped green onion
2-3 tbsp of low fat veganaise
2 tbsp of chopped chives
2 tbsp of organic hemp seed oil
3 tbsp of nutritional yeast
Salt and pepper to taste
