With thanksgiving coming up and Halloween around the corner its time to settle in and enjoy all the season has to offer.
My parents have apple trees and one of my favourite parts of fall is enjoying the weekly bags of macintosh apples they drop off. Nothing says fall like a crisp and delicious apple!
My apple and pecan salad is the perfect salad to showcase the fall season and use up my apples. Plus like all our recipes this salad is very simple and takes little effort.
Happy October and enjoy the salad.
2 apples (diced into cubes)
1 head of Boston lettuce
1/2 cup of pecans
1/2 cup of raisins
2 tablespoons of agave
1). Toss pecans in agave and spread onto a pan or baking dish. Place in oven on broil and cook for 2-3 minutes or until toasted.
2). Combine lettuce, apples, raisins and pecans and your salad is ready to be served.
Dressing suggestion would be a honey mustard- http://healthwealthandbaby.com/2014/01/27/day-10-vegan-honey-mustard-vinaigrette/
