Carrot soup

Happy Thanksgiving!

1 ½  pounds of carrots (6-7 large carrots), sliced

2 onions, chopped

2 cloves of garlic, minced

2 cups of vegetable stock

2 cups of water

2 tablespoons of olive oil

1 tablespoon of sea salt

1 tablespoon of pepper

Fresh coriander


1). Heat the olive oil in a large soup pot over medium-high heat, add garlic and onions. Cook for 5 minutes.

2). Add stock, water and sliced carrots.  Cook partially covered until very tender,  approximately 30 minutes.

3).  Place entire contents of the pot into a blender or food processor and blend till smooth.

4). Top with fresh coriander upon serving.

Note- If consistency is not too your liking add more water or stock to reduce thickness.
